(please check below if you are interested in a post about kitchens.)

Life.

It is finally feeling a bit less chaotic. Not less chaotic in the sense that my children are all of the sudden little docile angels, or that my house isn't a constant ticking time bomb just waiting to explode every time my kid(s) turn around to dump out another bucket of toys, or knock over a perfectly folded stack of laundry, and no, I have not found the way to effortlessly throw together perfect healthy meals for my family every night. No, not so much in that way.

More in the way that my mind feels settled. My thoughts were consumed the last few months with thinking about maybe going back to work, and trying to find a new job opportunity. I spent countless hours scouring websites and databases for some sort of career that would make sense for our family.

Nothing seemed right. And the worst part was, I wasn't appreciating the precious time I have with my kids. Right now. Everyday.

After looking at the options - we have decided for our family, it is best for me to stay home with our kids right now.

And from that day on - it is like my entire perception has changed. It was the hugest weight off my back (a weight that I wasn't even aware I had placed there). And now I am excited everyday I get to be home with my kids. My attitude about staying at home has totally shifted.

After all that searching for the perfect thing, the answer was right in front of me all along. Two of the most important assignments I will every have in my life.
It seems as though we will be moving again.
Our house sale is to be completing in 3 weeks.
Not that we have to be out then,
but we definitely need to move in that direction......

Tonight I have been dreaming about kitchens......
....you know......
like that.......
and this.....
....or maybe something like this?

(this one is in a house currently listed in Abbotsford. Not quite in our price range ; )

Well a girl can dream, can't she?!

Adjusting.....

.......to life without cable. I am slowly, adjusting. It is kind of nice actually. I am reading more with my kids, and reading more myself. Because, well, what else is there to do in the evenings? We are simplifying our lives a little. And I have to say, I like it. Just don't take away my Internet =).

Playing with C's new kitchen:

Me: "Could you make me some toast?"

C puts the bread in the toaster, it pops up, and before plating it he quickly turns to me with a questioning expressions

C: "You a girl mom???"

Me: "Yes I'm a girl....."

He then proceeds to pick up the purple princess plate, and put my toast on it. He didn't dare want to put the toast on a purple princess plate for a BOY! I guess he know nows that I am, indeed, a girl ; )

Potty Training - day 10.

warning: the follow post involves some annoying motherly bragging.

January 1st we went cold turkey on the diapers, and into full blown potty-training. It was SO nice to have J home for the next 4 days to help along the way. Obviously, C was more than ready for it. The first day we were out and about doing errands, and he didn't have any accidents. But today - day 10, marks the day that he went the entire day with NO accidents!! Not even a little dribble =)

I am sure there will still be accidents, but I am so proud of my little man. And his little ginch look so cute on his little bum =)

New Recipe

Because I know that the same old can get kind of boring, I tried out this new (to me) recipe the other night, and it was soooooo yum! So I thought I would share it. A little twist on the classic stir-fry. Definitely going to be added to the rotation.

Chicken Hoisin
  • 2 chicken breasts cut into bite sized pieces
  • 1 tbsp cornstarch (I used flour)
  • 1 tbsp cooking sherry or rice wine/vinegar (I used red wine vinegar)
  • 1 tbsp. soya sauce
  • 4 tbsp. oil
  • 1 green pepper
  • 8 water chestnuts sliced (the store was out, so I used celery)
  • 1/4 lb. mushrooms sliced
  • 1/2 tsp. salt
  • 2 tbsp. hoisin sauce
  • Roasted cashews

Coast chicken in cornstarch, add wine and soya sauce. Pat 1 tbsp. of oil in wok and heat. Add green pepper, mushrooms, water chestnuts and salt, stir-fry for 2 1/2 minutes. Set aside. Add remaining oil and heat. Add chicken, stir-fry until cooked. Add hoisin sauce. Return veggies to wok and cook 1 minute. Add cashews and heat through. Serve with rice!

Enjoy!
